Ingredients
Turkey Burgers
2 lbs ground turkey (93% lean recommended)
3/4 cup crumbled feta cheese
1/2 cup finely chopped shallot or red onion
2 cloves garlic, microplaned
1 Tbsp olive oil
Salt and freshly ground black pepper to taste
To Serve
4 Brioche buns, split
Tzatziki Sauce Recipe or store bought
Shaved red onion
Olive tapenade (optional)
1 cup fresh arugula
Instructions
In a large bowl, combine the ground turkey, Greek Blend Seasoning, feta, shallot or onion, garlic, and olive oil. Season lightly with salt and freshly ground black pepper. Mix gently until just combined so the burgers remain tender.
Form the mixture into four even patties, pressing a slight indentation into the center of each. Place the patties on a plate or tray and refrigerate for 20 to 30 minutes to firm up.
While the patties chill, prepare the accompaniments. Shave the red onion, rinse and dry the arugula, and split the ciabatta buns so assembly is quick once the burgers are finished.
Preheat a grill to medium high heat or heat a heavy skillet over medium heat. Lightly oil the cooking surface.
Cook the turkey burgers for about 5 to 6 minutes per side, or until nicely browned and cooked through to an internal temperature of 160°F. Remove from heat and let rest for several minutes until internal temp hits 165°F.
If grilling the burgers, toast the buns cut side down on the grill until lightly crisp. If searing the burgers on the stovetop, toast the buns in a 350°F oven until warmed and lightly crisp on the cut sides.
To assemble, spread olive tapenade on the bottom bun. Place the turkey burger on top, then add shaved red onion, a generous layer of mint tzatziki, and a handful of fresh arugula. Top with the top bun and serve immediately.
Pro Tip:
If using very lean ground turkey such as 99% fat free and the mixture feels loose, you can add 1 tablespoon of plain breadcrumbs to help bind the patties.
