2 15oz cans black beans, washed and drained
1 medium yellow onion, small dice
3 garlic cloves, minced
6 Tbsp olive oil (or your preferred cooking oil)
1 Cup roasted unsalted cashews
½ Cup frozen green peas
1½ Cups dry panko or breadcrumbs
¾ Cup feta, crumbled
1 Cup cilantro, leaves and stems, sliced fine
2 Tbsp mayonnaise
1 Tbsp your favorite Kinder’s BBQ Sauce
1 egg
To Assemble
6-8 Burger buns
8-12 butter lettuce leaves
8-12 slices of tomato (optional to season with Kinder’s The Blend Seasoning)
8-12 slices of red onion
Your favorite Kinder’s BBQ Sauce
Instructions
Drain and rinse beans, then pour onto a towel-lined tray to dry. Set to the side.
Heat 3 Tbsp of cooking oil in a sauté pan over high heat. Once hot, reduce heat to medium and cook onions and garlic for about 3-5 minutes until translucent.
While onion and garlic cook, roughly chop cashews in the bowl of your food processor by pulsing 6-8 times until roughly chopped without large pieces. Pour cashews into a large mixing bowl.
Next, pulse the frozen peas 4-6 times in the same food processor to break them up. Add in your black beans and pulse 8-10 times. The beans should be broken down, but chunky. Add this mixture into the mixing bowl with your cashews.
Add cooked onion and garlic to the mixing bowl and let cool before adding additional ingredients.
Once cooled, add the panko, feta cheese, cilantro, mayonnaise, Kinder’s BBQ sauce, Kinder’s Veggie Rub Seasoning, and egg. Mix everything together until homogenous.
Let this mixture sit for 10 minutes to allow the panko to hydrate into the mixture.
While the mixture rests, preheat oven to 200°F and prepare your toppings.
Divide the veggie burger mixture into 6-8 even patties.
Place a 10-12” pan onto high heat. Once the pan is hot, add 3 Tbsp of cooking oil and reduce heat to medium-high. Once the oil is hot, place 2-3 patties in the pan and sear until caramelized (about 2-3 minutes per side).
Once caramelized, using a spatula, carefully flip the patties, taking care not to splash the cooking oil. Once burgers are caramelized on both sides, remove from the pan and place in your preheated oven on a tray with a rack to keep them hot while you sear the rest of the patties.
Assemble burgers with your preferred toppings and your favorite Kinder’s BBQ sauce.
