Smoked Chicken Wings

Ingredients
For the Wings
4 lb chicken wings, flats and drumettes separated
2½ Tbsp Kinder's Louisiana Heat Seasoning, plus more for finishing (optional)
1 Tbsp extra-virgin olive oil
Chopped fresh parsley, for garnish (optional)
For the Dip
1 Cup prepared ranch dressing or blue cheese dressing
2 tsp Kinder's Louisiana Heat Seasoning
Instructions
Pat the chicken wings very dry with paper towels. Place the wings in a large bowl, drizzle with the olive oil, and toss just until evenly coated. Sprinkle with the Kinder's Louisiana Heat Seasoning and toss until every wing is evenly coated.
Arrange the wings in a single layer on a wire rack set over a rimmed baking sheet. If time allows, refrigerate uncovered for 2 to 4 hours.
Preheat your smoker to 225°F. If your grill has a Super Smoke setting, turn it on for maximum wood-fired flavor. If using another type of smoker, preheat it to 225°F and maintain a steady cooking temperature throughout the smoking process.
Arrange the wings directly on the grill grates, leaving a little space between each wing to allow the smoke and heat to circulate evenly.
Smoke the wings until they reach an internal temperature of 140°F, about 45 to 60 minutes. Begin checking the temperature after about 40 minutes, as cooking times may vary depending on your smoker, outdoor conditions, and the size of the wings.
Increase the Traeger or pellet grill temperature to 400°F. Continue cooking, flipping the wings halfway through, until the skin is browned and crisp and the wings reach an internal temperature of 180°F to 185°F, about 35 to 40 minutes. If your smoker cannot reach 400°F, transfer the wings to a 400°F oven or a hot gas grill to finish crisping the skin.
Transfer the wings to a large bowl or serving platter. If desired, lightly sprinkle with a little additional Kinder's Louisiana Heat Seasoning while the wings are still hot and toss gently to coat.
Garnish with chopped fresh parsley, if desired, and serve immediately.
