.
Ingredients
32 oz Cold Water
1 Tbsp Kosher Salt
3 Tbsp Granulated Sugar
16 oz Ice Water
Instructions
Combine cold water, Kosher salt, sugar, and Kinder's Woodfired Garlic in a pot and place on the stove over high heat. Warm the mixture until all of the sugar and salt has dissolved.
Remove from heat and transfer to a container large enough to hold all the liquid. Add the ice water and place in the fridge for 3 hours, or until cooled completely.
Once the brine is cold, pour the brine over the pork chops inside of a zip lock bag and seal the bag closed. Place the bag in the fridge overnight or for 10-12 hours.
After 10-12 hours in the brine, remove the pork chops and place them on a dish/plate lined with paper towels to dry.
Place the dish/plate with the pork chops in the fridge until you are ready to cook.
