Ingredients

  • 1 rotisserie chicken, picked

  • 1 Cup red onion, diced

  • 1 Cup roasted unsalted cashews, roughly chopped

  • 1½ Cups mayonnaise

  • ½ Cup Greek yogurt

  • 2 Cups golden raisins

  • 2½ Tbsp Kinder’s Lemon Herb Chicken Seasoning

  • 1½ tsp granulated sugar

  • 1 Tbsp apple cider vinegar

Instructions

  1. Remove the skin from the rotisserie chicken and chop into fairly fine pieces. Place into a large mixing bowl.

  2. Pick all of the meat off of the rotisserie chicken. Chop, tear, or shred larger sections of chicken.

  3. Add chicken to the mixing bowl with all remaining ingredients and fold them all together gently to combine.

  4. Enjoy as a sandwich or on salad.
