Leftover Chicken Salad Sandwich

Ingredients

  • 1 Cup chopped cooked chicken seasoned with Woodfired Chicken Grilling Seasoning (breast or thigh)

  • 1 Tbsp minced red onion

  • 1 Tbsp sliced celery

  • 2 tsp chopped parsley

  • 2 tsp chopped capers

  • 2 tsp mayo

  • ¼ tsp of Dijon mustard

  • 2 thick slices of country bread

  • 1 Cup of field greens

Instructions

  1. Chop up leftover cooked chicken breast and/or thighs that were prepared with Woodfired Chicken Grilling Seasoning.

  2. Place chopped chicken with all ingredients except bread and greens in a bowl.

  3. Stir to combine, cover, and place in your refrigerator until ready to use.

  4. When you’re ready to make your sandwich, lay out your sliced country bread and place the greens on first. Then, spoon the chicken salad over the lettuce and top with the other slice.

  5. Slice carefully in half and enjoy!
