Grilled Veggie Skewers

These simple barbecued chicken and vegetable skewers are a classic sure to please the whole family. The sea salt and garlic in our Grilled Veggie Seasoning up the flavor in this simple BBQ dish. Serve with your favorite grain for an easy BBQ dinner.

Ingredients

  • 3 chicken breasts, boneless skinless, cut into 1-2 inch pieces

  • 3 Tbsp olive oil, separated

  • 3 Tbsp Kinder’s Grilled Veggie Seasoning, separated

  • 2 bell peppers, cut into bite-sized chunks

  • 1 onion, cut into bite-sized chunks

  • 2 zucchini, cut into bite-sized coins

  • 2 yellow squash, cut into bite-sized coins

  • 8-10 skewers

Instructions

  1. Preheat grill for direct and indirect heated cooking areas, aiming for a direct heat temp around 400-425°F.

  2. Put half of your oil and half of your Kinder’s Grilled Veggie Seasoning in two separate bowls.

  3. In one bowl, add chicken pieces and toss to coat. In the second bowl, add all of your veggies and toss to coat.

  4. Skewer ingredients, alternating the chicken and veggies. If using wooden skewers, be sure to soak them in water for 15 minutes before skewering ingredients.

  5. Grill skewers over the direct heated area, rotating often to ensure an even char is achieved, about 5 - 8 minutes.

  6. Move to the indirect heated area and close the grill. Cook until chicken reaches an internal temperature of 165°F, about 10 minutes.

  7. Remove from the grill and let rest for 10 minutes before serving.
