Easy Stuffing Muffins

These Easy Stuffing Muffins turn a classic comfort food into perfectly portioned, everyday side dishe the whole family will love. Each muffin bakes up golden on the outside and tender on the inside, with big flavor in every bite. We love making these with our Italian Herb Stuffing Mix, but they work just as well with any of our stuffing flavors. These stuffing muffins make it easy to add big flavor to your family dinners.

  1. Pre-heat oven to 375°F. 

  2. Grease a 6 wells of a standard muffin tin.

  3. Using a microwave or small saucepan, melt butter. 

  4. In a large mixing bowl, add chicken broth and eggs and whisk until combined. Add stuffing mix, melted butter, and half of the shredded cheese (about 1/2 cup). Toss gently to combine.

  5. Spoon stuffing mixture into 6 equal potions in the prepared muffin pan. 

  6. Use remaining 1/2 cup of shredded cheese and top each of the muffins with a small amount of cheese. Allow to sit for about 10 minutes before baking to allow the bread cubes to soak up the liquid. 

  7. Bake for 18 to 22 minutes, or until golden brown. 

  8. Allow to cool for a few minutes before serving.
