Cheesy Bacon Skillet Stuffing

Ingredients
1 Cup Chicken Broth
2 Large Eggs
3 tbsp Butter (melted)
4 Bacon Strips (optional)*
1 cup Shredded cheese
2 large green onions, sliced
*Looking to substitute the bacon? A 1/2 pound of breakfast sausage works great.
Instructions
Pre-heat oven to 375°F.
Grease a 9" cast iron pan with butter or cooking spray. A 9” x 9” baking dish will also work.
If using, cook bacon (or sausage) in skillet on medium heat until lightly browned. Remove from pan and allow to cool. Crumble into pieces and set aside.
Using microwave or small saucepan, melt butter.
In a large mixing bowl, add chicken broth and eggs and whisk until combined. Add stuffng mix, melted butter, shredded cheese, and bacon (or sausage), and sliced green onions. Toss gently to combine.
Pour mixture into prepared cast iron pan or baking dish. Allow to sit for about 10 minutes to allow the bread cubes to soak up the liquid before baking.
Bake for 25 to 30 minutes, or until golden brown. Cool for 5 to 10 minutes before slicing and serving.
