Salmon with Couscous & Cherry Tomatoes

This Roasted Salmon with Sweet Corn Couscous & Cherry Tomatoes is a fresh, flavorful dinner made with Garlic & Herb Everyday Meals Seasoning. Ingredients

  • 1½ lb salmon

  • 1 packet Garlic Herb Meals & Marinades Seasoning

  • 3 Tbsp neutral oil 

  • 1 Tbsp olive oil 

  • 1 Cup Israeli couscous (uncooked) 

  • 2 Cups cherry tomatoes 

  • 1 Cup frozen corn 

  • 6 sprigs thyme 

  • 4 garlic cloves, crushed and left whole 

  • 1 lemon, cut into wedges 

Instructions

  1. Preheat oven to 400°F. 

  2. Apply 1 Tbsp of oil to salmon and season with Garlic & Herb Seasoning, reserving some seasoning for the tomatoes and couscous. 

  3. Roast salmon on a lined sheet pan (easy cleanup) for 12 minutes or until desired doneness. 

  4. In a mixing bowl, add tomatoes, 2 Tbsp oil, thyme sprigs, garlic, seasoning and roast on a lined sheet pan for 20 minutes at 400°F. 

  5. Boil couscous per package instructions. Drain and add 1 Tbsp of olive oil along with the remaining seasoning. 

  6. Cook frozen corn to package instructions, drain and add to the couscous mixture. 

  7. To serve, spoon couscous mixture into a mound on a plate, followed by the roasted tomatoes and gently place the salmon on top.
