Italian Chicken Sliders

Ingredients

  • 1½ lbs Chicken Thighs, Boneless & Skinless

  • 2 Tbsp Kinder’s Italian Chicken Seasoning

  • 4 Tbsp Cooking Oil

  • ½ Cup Water

  • 8 Slices Provolone Cheese

  • 1 Red Bell Pepper, Sliced

  • 1 Yellow Onion, Sliced

  • 1 Tbsp Kinder’s The Blend Seasoning (or salt and pepper to taste)

  • 4 Tbsp Butter, Melted

  • ½ Cup Parmesan Cheese, Grated (OPTIONAL)

  • 1 Pull-Apart Rolls (like Alfaro’s Artesano Bakery Rolls)

Instructions

  1. Turn Instant Pot® on high and add 2 Tbsp cooking oil. Once oil is shimmering, add chicken thighs and sear for 2 minutes on each side, or until each side has started to lightly brown.

  2. Add water and Kinder’s Italian Chicken Seasoning and stir to combine. Place lid on Instant Pot® and cook on high for 35 minutes. Leave Instant Pot® closed for 10 minutes to allow pressure to naturally release before opening.

  3. Remove lid and use a fork to shred chicken. Set aside.

  4. While chicken is cooking, heat skillet on medium-high heat and add 2 TBSP cooking oil. Add onions, peppers, and The Blend Seasoning (or salt and pepper). Cook, stirring frequently, for 5 to 8 minutes or until onions and peppers have softened. Remove from heat. Set aside.

  5. To assemble sliders, remove rolls from package and slice in half, keeping all of the rolls connected. You should be able to flip over the top part in one piece, with both cut sides of the rolls facing up.

  6. Place rolls on a baking sheet, cut side up, and place under the broiler for 30 to 60 seconds or until the rolls are nicely toasted and brown.

  7. Remove rolls from the oven. Place slices of provolone on the bottom of rolls. Then layer with a layer of shredded chicken. Finally, top with peppers and onions. Then cover with the top of rolls.

  8. Brush top of rolls with melted butter and, if using, sprinkle with grated parmesan cheese. Place under the broiler for an additional 30 to 60 seconds or until rolls begin to brown on top.

  9. Allow to rest for 5 minutes and then slice into individual sliders and serve.
