Ingredients

For the Meatloaf:

  • 1½ lb ground beef (93/7 or 90/10)

  • ½ lb ground pork

  • 1 Cup panko

  • ¼ Cup buttermilk

  • 2 large eggs, beaten

  • ½ Cup finely diced onion

  • ½ Cup finely grated carrot

  • ½ Cup finely diced celery

  • 2 medium cloves garlic, roughly chopped (about 2 tsp)

  • 1½ tsp Organic Seasoned Salt

  • Cup Worcestershire sauce

  • Cup finely grated Parmesan cheese (optional)

For the Glaze:

Instructions

  1. Preheat your oven to 350°F and lightly grease a loaf pan.

  2. In a large mixing bowl, combine the beef and pork. Add the panko and buttermilk, and stir in gently.

  3. Add the remaining ingredients and mix until everything is evenly combined, taking care not to overwork the mixture so the meatloaf stays tender.

  4. Transfer the mixture into the prepared loaf pan and gently press it in so it's evenly packed without compressing it too tightly. Smooth the top.

  5. Spread about half of the Kinder's BBQ Sauce evenly over the top of the meatloaf. Place the loaf pan on a rimmed baking sheet to catch any drips, then transfer it to the oven.

  6. Bake for about 1 hour, or until the meatloaf reaches an internal temperature of 135–140°F. Remove it from the oven and brush the top with the remaining BBQ sauce. Switch the oven to High Broil and position an oven rack about two rack positions below the broiler so the meatloaf isn't directly beneath the heat. Return the meatloaf to the oven and broil for 2 to 4 minutes, or until the glaze is bubbling, glossy, and lightly caramelized. Watch carefully to prevent burning.

  7. Remove the meatloaf from the oven, tent with tin foil, and let it rest in the pan for 20 to 30 minutes before slicing. This allows the juices to redistribute and helps the meatloaf hold together. After resting for about 10 minutes, the meatloaf should be 160F in the center.

  8. Slice and serve warm with mashed potatoes, roasted vegetables, or extra Kinder's BBQ Sauce on the side.
