Ingredients
3-4 chicken breasts
¼ Cup Kinder's Chicken Caesar Seasoning
2 eggs
2 Cups panko
1 Cup flour
Romaine Lettuce, Chopped
Parmesan
Slider Buns or Hawaiian Rolls
FOR FRYING
Peanut oil or vegetable oil, enough for 2–3 inches in a heavy Dutch oven
Instructions
Prepare your Chicken Caesar Dressing or pull your favorite Caesar dressing out of the fridge and set aside.
Prepare your chicken. Cut each breast in 2-3 pieces, aiming for cuts the same size as your slider buns or slightly larger. Pound lightly to slightly flatten and even out thickness for even cooking.
Prepare your dredge in two medium bowls. In one bowl, scramble eggs. In the next bowl, combine Chicken Caesar Seasoning, panko, and flour.
In a heavy-bottomed pan, heat frying oil to 350°F. Use a thermometer to maintain steady temperature. While that heats up, dredge your chicken by dunking chicken pieces into eggs, then dry seasoned mixture, then set on a plate to the side.
Drop in a few pieces at a time, frying for about 5 minutes or until internal temp reaches 160°F. Do this in batches to not overcrowd and keep an eye on the oil temp. Adjust the heat as needed to keep the oil between 325-350°F. If the crust browns too quickly, lower the heat slightly.
Transfer the fried chicken to a wire rack set over a sheet pan, letting the chicken rest and come to a final internal temperature of 165°F
While the chicken cools down, combine lettuce, dressing, and parm and toss.
Build each slider stacking chicken, salad, and a touch more parmesan.
Serve and enjoy.
