Ingredients
1½ lb chicken breasts or thighs
2 Tbsp oil
1 bag tortilla chips (16 oz)
1 can drained black beans (16 oz)
2 Cups Mexican cheese (grated)
¼ Cup cilantro (chopped)
½ Cup sour cream
¼ Cup red onion (chopped)
1 jalapeño (sliced, optional)
1 avocado (split and diced, optional)
Instructions
Preheat your grill or grill pan to medium-high heat.
Coat the chicken evenly with oil and sprinkle on the Kinder’s Chicken Taco Mexican Seasoning, mixing well.
Grill or cook the chicken over direct heat until fully cooked through. After cooking, remove from heat and let it rest for about 5 minutes before shredding. (Chicken can also be prepared ahead of time.)
Preheat your oven to 400°F.
Spread the tortilla chips on a baking sheet, then top with the grated cheese, black beans, and shredded chicken.
Bake in the oven until the cheese is melted and bubbling. Remove from heat and carefully transfer to your serving vessel.
